Here are the starter ingredients for the Amish Cinnamon Bread: 1 cup flour, 1 cup warm water, 1/2 cup sugar, 1 package (2 1/2 teaspoons) yeast.
Use plastic bowls with wooden or plastic spoons. Do Not refrigerate; leave out on counter top.
Day 1: Do nothing
Days 2, 3, 4 and 5: Mush bag 2 times a day (may form air inside bag, dont release
it).
Day 6: Add 1 C. flour, 1 C. sugar, and 1 C. milk. Mush together thoroughly.
Days 7, 8 and 9: Mush & let air out of bag 2 times a day.
Day 10: Pour & squeeze contents into big bowl. Add 1 C. flour, 1 C. sugar, and 1 C.
milk. Stir & pour four (4) one-cup starters into large ziploc bags. This is day 1 for
those bags, mark the date on the bag with a permanent marker. Give those bags & a copy
of this recipe to 4 friends (or, give to 3 & keep one!).
You will have a bit of starter left in the bowl. Add the
following to it & mix well:
1 C. vegetable oil
½ C. milk
3 eggs
1 t. vanilla
In a separate bowl, mix well then add to above mixture:
2 C. flour
1 C. sugar
1 ½ t. baking powder
½ t. baking soda
½ t. salt
1 t. cinnamon
1 large box instant vanilla or 1-1/2 small boxes banana pudding
1 C. chopped pecans (optional)
Spray pans with cooking spray (2 regular or 4 small loaf pans), and sprinkle with a mixture of 2 t. cinnamon & 4 t. sugar to coat the bottom & sides. Divide batter between pans & sprinkle with more cinnamon/sugar. Bake at 325 degrees for the following times: 4 loaves- 35 minutes: 2 loaves- 45 minutes: muffins- 25 minutes.
I have used several different puddings, and flavorings, with great success
