Frozen Spring Salad
1 envelope (1 Tbsp.) unflavored gelatin
1 c. cold water
1/2 c. sugar
2 Tbsp. lemon juice
1/2 pt. dairy sour cream
2 (3 oz.) pkg. cream cheese (room temperature)
1 (11 oz.) can Mandarin oranges, drained
1 (1 lb.) can sliced peaches, drained
1 (1 lb. 14 oz.) can pitted dark sweet cherries, drained
2 c. miniature marshmallows
1/2 pt. whipping cream, whipped
Soften gelatin in cold water in small metal pan. Place over hot water to
dissolve gelatin. Combine sugar, lemon juice, sour cream and cream cheese. Add
gelatin and beat until well blended. Chill until mixture thickens and begins to
set. Beat until smooth. Fold in fruits, marshmallows and whipped cream. Pour
into 2 refrigerator trays (1 quart size) or two No. 2 or No. 2 1/2 size fruit
cans. Freeze.
To serve: Unmold. Slice and arrange slices on crisp lettuce leaves. If desired,
top with whipped or sour cream.
