Black Bottom Banana
Cream Pie
(2 recipes!)
1- (9") HONEY MAID honey graham pie crust
1 egg white, slightly beaten.........1/4 C. heavy cream
4 (1 oz.) squares semisweet chocolate
1/4 C. PLANTERS dry roasted peanuts, coarsely chopped
1 small banana, sliced.................2 C. cold milk
1 (4 serving size) pkg. ROYAL instant vanilla pudding
Whipped topping, for garnish......peanuts, for garnish
Preheat oven to 375 degrees. Brush pie crust with egg white. Bake for 5 minutes; set aside.
In a small saucepan over low heat, heat heavy cream & chocolate until chocolate melts. Stir in chopped peanuts. Spread evenly in pie crust. Arrange banana slices evenly over chocolate; set aside.
Prepare pudding according to package directions for pie using cold milk; carefully pour over bananas. Chill at least 2 hours. Garnish with whipped topping & additional chopped peanuts.

1 (9") pastry crust
3 T. cornstarch, divided
2 T. sugar
2 T. unsweetened cocoa
dash salt
1-1/3 C. 1% lowfat milk, divided
1 oz. semisweet chocolate, chopped
1/2 C. sugar
1/4 t. salt
2 large eggs
1 T. butter
2 t. vanilla
1/4 C. (2 oz.) fat-free cream cheese, softened
2 C. sliced ripe banana (about 2 large bananas)
1-1/2 C. frozen fat free whipped topping, thawed
chocolate curls (optional, for garnish)
Prepare & bake pastry crust
Combine 1 T. cornstarch, 2 T. sugar, cocoa & dash salt in a small heavy saucepan. Gradually add 1/3 C. milk, stirring with a whisk. Cook & stir 2 minutes over medium-low heat. Stir in chopped chocolate; bring to a boil over medium heat. Reduce heat to low; cook 1 minute, stirring constantly. Spread this mixture into the bottom of prepared crust.
Combine 2 T. cornstarch, 1 C milk, 1/2 C. sugar, 1/4 t. salt, eggs & butter in a heavy saucepan over medium heat, stirring constantly with a whisk. Bring to a boil. Reduce heat to low; cook 30 seconds or until thick. Remove from heat; add vanilla. Beat cream cheese till light (about 30 seconds). Add 1/4 C. hot custard to cream cheese; beat just until blended. Stir in remaining custard.
Arrange banana slices on top of chocolate layer, spoon custard over bananas. Press plastic wrap onto surface of custard, chill 4 hours. Remove plastic wrap & spread whipped topping over custard. Garnish with chocolate curls, if desired. Chill until ready to serve. Yield: 8 slices
