Broccoli Rice Casserole
Great for potlucks!


1/2 C. chopped onion

2 T. margarine, divided

2 C. hot, cooked, long grain rice

1 (10-3/4 oz.) can condensed cream of mushroom soup

1 (10 oz.) package frozen chopped broccoli, cooked & drained

1 (8oz.) jar Cheez Whiz

1/2 C. fresh bread cubes (optional)

Cook & stir onion in 1 T. of the margarine in a large skillet till tender. Add rice, soup, broccoli, and Cheez Whiz; mix lightly. Spoon into a 1-1/2 Qt. casserole. Top with remaining 1 T. margarine (melted) and bread cubes. Bake at 350° for 30 to 35 minutes or until thoroughly heated. Yield: 4 to 6 servings
