Make-Ahead Hamburger Mix
4 lb. ground beef.................2 T. brown sugar
1 C. chopped onion............1 T. Worcestershire sauce
1 (14 oz.) bottle catsup.......1 T. salt
1 C. water..........................2 t. vinegar
1/2 C. chopped celery........1/2 t. dry mustard
1/4 C. lemon juice
Cook & stir meat and onion till meat is brown; drain. Add remaining ingredients; heat to boiling, stirring frequently. Reduce heat; cover & simmer 30 minutes. Cool. Divide among five 1-pint freezer containers; label, date & freeze.
To use-
Barbecued Burger Buns-
Place one or more of the frozen containers in hot water to loosen mix. Heat in saucepan
over medium heat until thawed & cooked thru. Serve 1/4 C. on each of 6-8
hamburger buns. The entire mix will fill 30-40 buns.
Chili-
In saucepan, heat 1 pint hamburger mix. Stir in 1 can (15-1/2 oz.) kidney beans (with
liquid), 1/2 to 1 C. tomato juice & 2-3 t. chili powder. Heat through.
Mock Pizza-
In saucepan, heat 1 pint hamburger mix. Spoon over 6 to 8 split & toasted hamburger
buns. Sprinkle with shredded Velveeta & a dash of oregano. Broil 3 to 4" from
heat just until cheese is bubbly.
