Burnt Sugar Cake


Put a large cup of granulated sugar in a cast-iron skillet & burn it until it smokes. Stir constantly while burning. After it smokes, add 1/2 C. boiling water & boil into a thick syrup. Put it in a bottle & it will keep indefinitely. Makes 3 cakes with frosting.

Cake:

1/2 C. butter.....................2 C. flour

1-1/2 C. sugar..................2 t. baking powder

2 egg yolks.......................1 C. cold water

2 t. burnt sugar syrup.........2 egg whites, beaten stiff

1-1/2 t. vanilla

Cream butter, add sugar & mix well. Add egg yolks, vanilla & burnt sugar, mix. Stir together dry ingredients & add alternately with water. Beat well, then fold in beaten egg whites. Divide batter in thirds, bake in greased & floured pans at 350° until toothpick comes out clean. Remove to wire racks to cool completely. Frost with:

Frosting:

1 C. sugar........................3 t. burnt sugar syrup

1/3 C. milk or cream........1 t. vanilla

Cook all ingredients over medium heat till the consistency of honey, stirring constantly. Remove from heat & beat with an electric mixer till cooled,  fluffy, & spreading consistency. Frost top of each cake layer.
