Caramel Glazed Flan


¾ C. sugar
4 eggs
1-3/4 C. water
1 (14 oz.) can sweetened condensed milk
½ t. vanilla
1/8 t. salt

In a heavy skillet over medium-low heat, cook sugar, stirring constantly, until melted & caramel colored. Pour into a 9" round baking pan, tilting to coat bottom completely. In a medium bowl, beat the eggs; stir in water, condensed milk, vanilla & salt. Pour over caramelized sugar; set pan into a larger pan. Place both pans into a preheated 350º oven; Fill larger pan with 1" boiling water. Bake for 55-60 minutes or until center is just set (will jiggle slightly). Remove dish from larger pan to a wire rack; cool for 1 hour. Refrigerate several hours or overnight. To unmold- run a knife around edge & invert onto a large, rimmed serving platter (at least 10"). Yield: 8 servings.
