Carrot-Apple-Raisin Salad
1/2 large apple, halved and cored
1 tsp. lemon juice
1 small carrot, pared
2 Tbsp. lemon or vanilla yogurt
2 Tbsp. raisins
Cut apple into 1/3-inch chunks and toss with lemon juice in small bowl to keep it from
darkening. Trim ends of carrot and cut lengthwise into quarters, then into 1/3-inch
pieces. Add carrot, yogurt and raisins to apple and toss to combine. Spoon into insulated
containers.
