Carrot-Nut Bread


3 eggs
1 1/2 c. sugar
1 c. vegetable oil
2 1/4 c. whole wheat flour
1 1/4 tsp. soda
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
1 1/4 c. raisins
1 1/2 c. chopped walnuts
2 1/4 c. grated carrot
3/4 tsp. salt

Beat eggs well, then add sugar and oil. Beat until light. Sift and add dry ingredients (flour, salt and spices). Stir in carrot, raisins and walnuts last. Stir until just moistened. Turn into 9 x 5 x 3-inch loaf pan and bake in preheated 350 degree oven for 1 ¼ hours. Cool on wire rack 10 minutes, then remove from pan to rack to cool completely.
