Carrot Pancakes
1 oz. bread crumbs
1 Tbsp. flour
1/4 tsp. baking powder
1 tsp. vanilla
1 tsp. Sweet 'N Low
1/4 c. applesauce
1/4 c. blueberries
2 Tbsp. diet margarine
1/8 tsp. baking soda
2 Tbsp. milk
1 tsp. vinegar
1/8 tsp. soda
pinch of salt
1/2 carrot, grated
1 Tbsp. orange, grated
1 egg
2 tsp. Sweet 'N Low
In a blender combine bread, flour, baking powder, soda, salt, carrot, orange peel and egg.
Blend for 1 minute on low.
Combine milk, vinegar and soda in a separate cup. After soda reacts, pour into ingredients
in blender. Also add vanilla and 1 teaspoon Sweet 'N Low. Blend all for 1 minute on high.
Cook in non-stick pan sprayed with Pam. Makes 4 pancakes. In a saucepan, combine
applesauce, blueberries, 2 teaspoons Sweet 'N Low and margarine. Heat and use as a topping
for pancakes.
