Cheddar-Chive Biscuits


4-1/2 C. all-purpose baking mix, such as Bisquick, plus more for sprinkling

2 oz. Cheddar cheese, cut into ¼" cubes (about ½ cup)

½ C. chopped fresh chives

1-1/3 C. buttermilk

1 egg

In a large bowl combine baking mix with cheese & chives; stir in buttermilk until mixture is just combined. Sprinkle work surface with more baking mix; turn dough out onto surface. Knead till smooth, about 30 seconds. On wax paper roll out or pack dough into a 9x5" rectangle; freeze 10 minutes. Meanwhile, preheat oven to 450º. Lightly beat egg with 1 t. water; set aside. Using a 2-1/2" round cutter cut out 8 biscuits, rerolling scraps. Place on an ungreased baking sheet; brush with reserved egg mixture. Bake 10-12 minutes or until golden. Yield: 8 biscuits.
