Crispy Chocolate Log


1 (10 oz.) package large marshmallows

¼ C. butter or margarine

¼ C. peanut butter

5-1/2 C. crisp rice cereal

1-1/3 C. semisweet chocolate chips

¾ C. butterscotch chips

Line a 15x10x1" jelly roll pan with waxed paper; grease the paper & set aside. In a large microwave safe bowl, combine the marshmallows, butter & peanut butter. Cover & microwave on high for 2 minutes; stir until well blended. Stir in cereal till well coated. Spread evenly into prepared pan. In a microwave safe bowl, combine chocolate & butterscotch chips. Microwave, uncovered, on high for 2 minutes. Stir; spread over cereal mixture to within 1" of edges. Roll up, jelly roll style, starting with a short side, peeling waxed paper away while rolling. Place seam side down on a serving plate. Refrigerate for 1 hour or until set. Cut into 1" slices. Yield: 10 servings. Note: microwave oven power varies, check at regular intervals while microwaving. Actual time may be more or less than called for in recipe.

Tracy's Note- I received an email on 12/19/02, and the sender (also a Tracy) has retyped the recipe so it's easier to follow. Here's her revision-

INGREDIENTS:

    • 1 package large marshmallows (10 ounces)
    • 1/4 cup butter or margarine
    • 1/4 cup peanut butter
    • 5 1/2 cups crispy rice cereal
    • 1 1/3 cups semisweet chocolate chips
    • 3/4 cup butterscotch chips

DIRECTIONS:

  1. Line a cookie sheet with parchment paper (or waxed paper); brush a small amount of melted butter on the paper and set aside.
  2. Measure out crispy rice into a large bowl.
  3. In another large microwave-safe bowl, combine the marshmallows, butter and peanut butter.
  4. Cover and microwave on high for 2 minutes; stir until well mixed.
  5. Add melted marshmallows into bowl of crispy rice – mix until all the cereal is covered.
  6. Pour mixture into prepared pan and spread to cover the area. (I used food preparation gloves that had a little bit of melted butter on them – it makes the process much easier)
  7. In a microwave-safe bowl, combine chocolate and butterscotch chips.
  8. Microwave uncovered, on 80% power for 1 minutes, stir, and microwave on high power for 1 minute.
  9. Stir; spread over cereal mixture to within 1" of edges.
  10. Roll up jellyroll style, starting with a long side, peeling paper away while rolling.
  11. Place seam side down on a serving plate.
  12. Refrigerate 1 hour or until set.
