Chocolate Pecan Shortbread


1-1/2 C. flour....................1/2 t. vanilla

1/2 C. cocoa.....................1 c. sugar

1/2 C. powdered sugar......1/2 c. ground pecans

1 C. unsalted butter

Place the flour, cocoa, & powdered sugar in a food processor. Turn the processor on & slowly add the butter, 2 T. at a time. Add the vanilla 7 process until the dough forms a ball on top of the blades. In the palms of your hands, roll the dough into balls about 1/2 inch thick. Place on a well-greased baking sheet & press the balls down with the bottom of a glass until it is about 1/4 inch thick. Sprinkle each with granulated sugar & pecans and press to flatten again. bake at 350 degrees about 10 minutes, or until brown. Cool on baking sheet. (Flattening the dough makes the cookies nice & crispy.) Yield: 18 cookies
