Chocolate Truffles
1/2 C. heavy cream.............................1 T. shortening
1/3 C. sugar........................................Finely chopped nuts
6 T. butter..........................................Shaved chocolate
2 C. mini semisweet chocolate chips....Powdered sugar
1 t. vanilla
Combine heavy cream, sugar & butter in saucepan. Bring to a boil, remove from heat. Add 1 C. chocolate chips & stir until chips are melted. Add vanilla, pour into a bowl & let stand till cool, stirring occasionaly. Chill, covered, for several hours.
Shape chilled mixture into 1/2 inch balls. Roll in chopped nuts, shaved chocolate, or powdered sugar; or coat with 1 C. chocolate chips melted with 1 T. shortening.Can also be rolled in cocoa powder, or coconut, or anything you would think could be tasty.
Yield: 3 dozen truffles
