Chocolate Sugar Drops
1/2 C. butter or margarine, softened.................1/4 C. unsweetened cocoa
1/2 C. vegetable oil..........................................1/2 t. baking soda
1/2 C. powdered sugar....................................1/2 t. cream of tartar
1/2 C. granulated sugar....................................1/4 t. salt
1 egg...............................................................1 t. vanilla
2 C. all-purpose flour.......................................granulated sugar
Cream butter, oil, powdered sugar, 1/2 C granulated sugar & the egg in a large bowl till light & fluffy. Combine the dry ingredients in a small bowl. Add to creamed mixture with vanilla, stirring till dough is smooth. Cover; refrigerate at least 30 minutes.
Shape chilled dough into balls the size of marbles. Place 2" apart on lightly greased (or parchment lined) baking sheets. Flatten each cookie to about 1/3" thickness with bottom of glass that has been dipped in granulated sugar. Dip glass before each cookie. Bake 10 minutes, until firm. Do not overbake. Remove to racks to cool. Yield: about 5 dozen cookies
