Cinnamon Knots


1 t. cinnamon...........................1 t. salt

sugar.......................................2/3 C. margarine, softened

2-1/2 C. flour.........................1/3 C. milk

1 T. baking powder................1/2 t. vanilla

Mix cinnamon & 2 T. sugar in a small bowl; set aside.

Measure flour, baking powder, salt & 1/4 C. sugar into a large bowl. Using a pastry blender, cut margarine into flour mixture until it resembles coarse crumbs. Stir milk & vanilla into crumbs with a fork until mixture leaves the sides of bowl & dough holds together. Shape into a ball & divide in half.

Roll half of dough 1/8" thick on a lightly floured surface with a floured rolling pin. Cut out using a floured doughnut cutter. Twist each circle to form a figure 8, place on an ungreased cookie sheet & sprinkle with cinnamon/sugar mixture. reroll trimmings.

Bake at 400° for 10-12 minutes, remove to a rack to cool. Store tightly covered. Yield: 4 dozen
