Coconut-Orange Jumbles
3/4 c. shortening
1 1/4 c. sugar
2 egg yolks, well beaten
1 c. shredded coconut
2 1/2 c. flour
1/4 tsp. salt
1/2 tsp. soda
1/3 c. strained orange juice
coconut and grated orange peel
Cream shortening and sugar together; add egg yolk and coconut and beat well.
Sift together flour, salt and soda; add to the creamed mixture alternately with
orange juice. After each addition, beat until smooth. Drop from teaspoon onto
ungreased cookie sheet. Sprinkle with additional coconut and grated orange peel.
Bake in a moderate 375 degrees oven for 10 to 12 minutes. Makes 50 cookies.
Frosting: Dip cookies into a thin confectioners icing; roll immediately in
shredded coconut.
