Coconut Kisses
1/2 c. egg whites
1 1/4 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
2 1/2 c. shredded coconut
Beat egg whites until frothy. Gradually beat in sugar. Continue beating with
rotary mixer until very stiff and glossy. Stir in salt, vanilla and coconut.
Drop by teaspoons on ungreased baking sheet. Bake about 20 minutes in a 325
degrees oven until set and delicately browned.
Makes about 3 dozen kisses.
Two cups finely chopped nuts may be used instead of coconut. You can also mix
coconut and nuts.
