Coconut Drop Sugar Cookies
2 c. sugar
1 c. oleo
1 c. Crisco
3 eggs, beaten
2 1/2 Tbsp. vanilla
1 tsp. coconut extract
2 c. coconut
6 c. flour
1 tsp. salt
1 tsp. soda
1 tsp. baking powder
4 Tbsp. milk
Sift together flour, salt, soda and baking powder. Cream shortenings, sugar,
vanilla, coconut extract and beaten eggs. Add coconut; mix well until fluffy. Stir in 1/2 dry
ingredients until mixture is smooth; blend in 4 tablespoons milk, then rest of
flour. Drop by teaspoon onto
greased cookie sheet. Flatten with bottom of water glass, which has been dipped
in sugar. Bake in hot 400 degrees oven until brown.
