Cheese Puff
This is a good recipe to take to potluck dinners. It is cheap, carries well and is very nutritional.
1 to 1 1/4 lb. Monterey Jack cheese
8 to 10 canned whole green chilies
6 to 8 well beaten eggs
1/4 tsp. salt
cayenne pepper (optional)
Remove the seeds and pith from the chilies after slicing them open. Place a layer of thinly sliced cheese in greased 2 to 3 quart casserole, follow this with a layer of chilies that have been opened up and laid flat. Alternate the cheese and chilies. Put eggs and salt in blender. Process until foamy. Pour mixture over cheese and chilies. Sprinkle with cayenne pepper. Bake at 375 degrees for 45 minutes to 1 hour.
