Reuben Potluck
1 lb. can sauerkraut, drained
2 medium tomatoes, sliced
2 Tbsp. Thousand Island dressing
1 (12 oz.) can corned beef
2 c. shredded Swiss cheese (8 oz.) pkg.
1 can biscuits (6)
2 crisp rye crackers, crushed
1/4 tsp. caraway seed
Spread sauerkraut in 9 x 9-inch pan. Top with tomato slices. Dot with dressing and 2
tablespoons butter (optional). Cover with corned beef; sprinkle with cheese. Bake at 425
degrees for 15 minutes. Separate biscuits; place on baked casserole. Sprinkle crackers and
caraway seed over all. Bake 15 to 20 minutes until biscuits are browned.
