Chicken N' Dumplings Comfort Food
1 (4 to 6 lb.) hen
water to cover
salt and pepper
2 1/4 c. Bisquick
2/3 c. milk or water
1 stick margarine
1/2 c. flour
Wash and clean hen well. Place in large pot and add water, salt and pepper. Cook
until tender. Remove from broth onto platter and allow to cool until can be
handled comfortably. Remove meat from bones, discarding all skin and fat. Cut
meat into bite-size pieces and put back into broth after most of fat in broth
has been skimmed off. Add margarine and
more salt and pepper if needed. Bring back to boil and lower heat.
Mix Bisquick with milk; form into a large ball. With well floured hands, pinch
off walnut size pieces of dough, dip in flour and drop into simmering broth. Use
as many dumplings
as needed. (Any left over may be baked as bread.) Cover and simmer until
dumplings are no longer "doughy" in center (15 to 20 minutes).
