Comfort Icing


2 c. white sugar
1/4 tsp. salt
2 Tbsp. white Karo syrup
1 tsp. vanilla
2 egg whites
1/2 c. water

Mix sugar, salt, Karo syrup and water in saucepan; boil together to 240 degrees, or until it spins a thread. Beat egg whites until stiff, but not dry. Pour hot syrup over beaten egg whites; add vanilla & beat until white peaks hold their shape. This icing resembles Divinity as it forms a crust on top, but stays soft underneath and does not crack when cut.
