Meat Loaf
(from my Grandma's friend, Mary Scott)
2 to 3 lb. ground beef (I have found that the 80% fat-free is as lean as you should use, a little fat is a help)
2 onions, chopped*
3 or 4 eggs (depending on if you use 2 or 3 lbs. of beef)
salt & pepper
3/4 C. cracker crumbs
2-3 T. sour cream PLUS 1/4 C. milk (or 1/2 C. milk, alone)
3 T. Country Bob Edson's All-Purpose Sauce (This is my addition to the original recipe-Tracy)
(*Tracy's note: I have found that one onion is actually plenty!)
Mix all the above ingredients by hand & form into a loaf shape. Top with a mixture of brown sugar, ketchup & some more Country Bob's sauce. Place 3 slices of bacon over the topping and bake at 350° for 1 to 1-1/2 hours. Let set for 5 to 10 minutes before removing to plate for slicing.
My favorite way to serve this is with REAL mashed potatoes & peas...
