Cranberry Cake
3 c. unsifted flour
1 c. sugar
2 tsp. baking soda
1 tsp. salt
1 c. chopped nuts
1 (1 lb.) can whole berry
cranberry sauce
1 c. Hellmann's mayonnaise
grated rind of 1 orange
1/2 c. orange juice
Cranberry Frosting:
3 Tbsp. margarine
2 c. unsifted confectioners
sugar
1/4 c. whole berry cranberry
sauce
Grease 9 x 3 1/2-inch tube pan; Line bottom with waxed
paper. Mix together flour, sugar, baking soda and salt.
Reserve 1/4 cup cranberry sauce for frosting. Add remaining
cranberry sauce, nuts, mayonnaise and orange rind to flour
mixture. Mix well. Stir in orange juice. Pour into prepared
pan. Bake in 350 degrees oven about 1 1/4 hours or until cake tester
comes out clean. Remove from pan. Cool and frost with frosting.
Cranberry Frosting: Stir margarine to soften. Add
sugar and cranberry sauce. Beat until creamy.
