Cranberry Crunch Pie
1 baked 9-inch pie shell or
graham cracker crust
1 pkg. (8 oz.) cream cheese
1/3 c. firmly packed brown
sugar
2 Tbsp. cornstarch
1 can (1 lb.) whole cranberry
sauce
1/8 tsp. salt
2 c. (about 1 large) peeled
and chopped tart apple
Walnut Streusel:
1/3 c. flour
1/2 c. chopped walnuts
3 Tbsp. firmly packed brown
sugar
1/4 tsp. ground cinnamon
1/4 c. chilled butter or
margarine
Prepare pie shell and set aside. In small bowl of electric mixer, beat cheese until smooth and creamy; spread in
pie shell. Stir together the brown sugar, cornstarch and salt.
Add cranberry sauce to blend thoroughly. Spoon cranberry sauce
on top of cream cheese, spreading evenly.
To make streusel: Combine all ingredients and rub
mixture between fingers to form large crumbs. Sprinkle on top
of cranberry mixture. Bake in 375 degrees oven for 45 minutes or
until streusel is golden brown. Cool, then refrigerate to
serve chilled. Serves 6 to 8 and many more. Great at Christ
mas time for potlucks.
