Cranberry Mini-Meatloaves
1 lb. ground beef
1 c. cooked rice
1/2 c. tomato juice
1 slightly beaten egg
1/4 c. minced onion
1 1/2 tsp. salt
1 lb. can whole cranberry
sauce (2 c.)
1 tsp. lemon juice
1/3 c. brown sugar
Combine meat with rice, tomato juice, egg and minced
onion; mix thoroughly. Shape meat mixture into 5 individual
loaves and place in 13 x 9 x 2-inch baking dish. Combine
cranberry sauce, brown sugar and lemon juice; spoon over
loaves. Bake 40 minutes in 350 degrees oven. Remove meat loaves,
pour cranberry sauce from pan and pass with meat loaves.
