Cranberry Mousse
1 pkg. (3 oz.) raspberry
flavored gelatin
1 c. Ocean Spray cranberry
juice cocktail
1 can (16 oz.) Ocean Spray
jellied cranberry sauce
2 c. frozen nondairy whipped
topping, thawed
In a saucepan, heat cranberry juice cocktail to boiling;
Remove from heat. Stir in gelatin until dissolved.
In a bowl,
beat cranberry sauce with electric beater on high 1 minute;
Stir into gelatin mixture. Chill in refrigerator 2 1/2 hours
until thickened, but not set.
Fold in nondairy whipped topping
until mixture is thoroughly blended. Spoon into dessert dishes or a 9-inch prepared pie shell. Chill until firm. Serves 8.
