Crunchy Salad
Had this on July 4th, it's yummy!


2 heads Celery or Napa cabbage, (or 1 of each)- chopped very fine
2 bundles green onions- chopped very fine
¼ head red cabbage- shredded
2 large carrots- shredded

-Mix all above together in serving bowl, set aside

Brown in a pan & leave separate till serving:
2 T. butter
2 pkg. Ramen noodles (any flavor, you will not use flavoring packets)- crunched up finely
(Leave package sealed, and crunch up with the heel of your hand. Fish out the seasoning packet before using)
1 pkg. sliced almonds, chopped
½ large jar of sesame seeds

For dressing:
2 T. soy sauce
¼ C. apple cider vinegar
½ C. sugar
¾ C. vegetable oil
-Bring to a boil, boil for 4 minutes- no longer. Let cool before using.

Mix all 3 components together just before serving.


*Dressing can be made ahead & stored in an airtight jar. Good on other salads, too!
*Makes a large batch, can be halved. Keeps pretty well, but doesn't stay crunchy.
