Chocolate Covered Cherry Cookies


1-1/2 C. flour
1/2 C. unsweetened cocoa
1/4 t. salt
1/4 t. baking powder
1/4 t. baking soda
1/2 C. butter or margarine, softened
1 C. sugar
1 egg
1-1/2 t. vanilla
10 oz jar maraschino cherries, juice reserved
6 oz. semisweet chocolate chips
1/2 C. sweetened condensed milk

In a large bowl, whisk together the first 5 ingredients. In a mixing bowl, beat together the butter & sugar on low speed till fluffy. Add egg & vanilla; beat well. Gradually add dry ingredients to the creamed mixture. Beat until well-blended. Shape dough into 1" balls, place on an ungreased cookie sheet. Press down on center of ball with thumb to make an indentation. Drain cherries, reserving juice. Place a cherry in each indentation. In a small saucepan, heat chocolate & condensed milk over low heat, stirring until chocolate is melted. Add reserved cherry juice; glaze cherries in indentations with this mixture. Bake at 375° for 10-12 minutes. Yield: 48 cookies
