Chocolate Chip Cookie Mix
(comes in handy when you need to bake a batch of cookies in a hurry!)


4-1/2 C. flour
1-1/2 C. sugar
1-1/2 C. packed brown sugar
2 t. baking soda
1-1/2 t. salt
2 C. shortening
2 C. chopped pecans
2 packages (12 oz. each) semisweet chocolate chips

Additional ingredients:
(for each batch baked)

2 eggs
2 t. vanilla

In a large bowl, whisk together the first 5 ingredients. Cut in the shortening until crumbly. Stir in pecans & chocolate chips. Store in an airtight container in a cool dry place for up to 6 months. Yield: 2 batches

To prepare cookies:

In a mixing bowl, beat eggs & vanilla. Stir in 7 cups cookie mix until well-blended. (If dough is too dry, add 1-2 T. water). Drop by teaspoonfuls 2" apart onto greased baking sheets. Bake at 375° for 7-9 minutes or until golden brown. Cool on sheets 1-2 minutes before removing to a rack to cool completely. Yield: about 6 dozen per batch
