Fudge
(From my Aunt Dorothy, my Dad's sister)
3 C. sugar...........................pinch salt
3 rounded T. cocoa............1 t. vanilla
2 T. corn syrup..................2/3 stick margarine
1-1/2 C. half & half
Combine all ingredients except margarine & vanilla. Cook over medium low heat unil it reaches 240° (soft ball stage) on a candy thermometer. Do Not Stir. Remove from heat & set pan in cold water, add butter & vanilla. Cool for 5 minutes. Beat with an electric mixer until it starts to thicken; then beat by hand until it loses it's gloss & turns lighter. Pour onto a buttered platter, let set & cut in small pieces.
Nuts can be added when you start beating by hand, if desired.
