Aloha Quick Bread


1/2 C. butter or margarine, softened
1 C. sugar
2 eggs
1 C. mashed ripe bananas (about 2 medium)
1/4 C. milk
1 T. grated orange peel
1 t. vanilla extract
1/2 t. almond extract
2 C. flour
1 t. baking soda
1/2 t. salt
1 C. flaked coconut
1/2 C. chopped nuts
1/2 C. crushed pineapple

In a mixing bowl, cream butter & sugar. Add the eggs, one at a time, beating well after each addition. Beat in banana, milk, orange peel & extracts. Combine dry ingredients; add to the creamed mixture until just moistened. Fold in the coconut, nuts & pineapple. Transfer to a greased 9 x 5 x 3" loaf pan. Bake at 350° for 1 hour and 20 minutes, or until a pick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
