Figaroons
1-3/4 C. flour.........................3/4 C. ground walnuts
1 C. sugar..............................2 t. grated lemon peel
3/4 C. margarine, softened......1 (12oz.) package dried figs
1/4 t. salt.................................3 T. apricot preserves
In a large bowl, beat flour, sugar, margarine, salt, 1/2 C. walnuts & 1 t. lemon peel on low speed till mixed (it will be crumbly). Remove stems from figs & finely chop them. In a medium bowl, mix chopped figs, preserves, 1/4 C. walnuts & 1 t. lemon peel.
Grease a 9x9" pan. Reserve 1-1/2 C of crumb mixture. Press the rest into the bottom of the pan; spread fig mixture over evenly. Sprinkle with reserved crumbs. Bake at 400° for 25 minutes; cool in pan. Cut into 36 squares, and store tightly covered for up to 1 week.
