Dandelion Fritters
fat or oil for deep frying
2 tsp. baking powder
1/2 c. milk
2 eggs
1 1/2 c. dandelion flowers
1 c. flour
pinch of salt
2 Tbsp. powdered nondairy creamer
Heat fat to frying temperature, 350 degrees, in deep-fryer or saucepan. Sift
together the flour, baking powder and salt. In another bowl, beat the milk,
nondairy creamer and eggs together. Combine mixtures and whisk just until
smooth. Wash flowers and clip off any stems that may remain. Do this quickly so
the flowers will not wilt. Pat flowers dry between paper towels. Dip blossoms
into batter and fry a few at a time until golden brown. Drain on paper towels
and keep warm while frying remaining flowers. Serve immediately when all are
done.
Serves 8.
