Pickled Petals

Following flowers may be used: roses, violets, nasturtium, calendula,
chrysanthemum, primrose, day lilies, gladiolus and geraniums.
Carefully remove sepals from base of flower, also stem and stamens from inside
flowers. Layer flowers in a crock or jar, covering each layer with sugar. When
jar or crock is filled, pour boiling vinegar to fill. Add a sprig of mace or
mint. Seal. Pickled petals are ready to mix with salads or garnish a relish tray
in about one week.
