Frosty Fruit Salad
1 package (8 oz.) Neufchâtel cheese, softened
1 C. sour cream
1/4 C. sugar
1/4 t. salt
1 can (17 oz.) apricot halves, drained & halved
1 can (8-3/4 oz.) crushed pineapple, drained
1 can (16 oz.) pitted dark sweet cherries, drained
1 C. mini marshmallows
Crisp greens
In a large mixer bowl, beat cheese till smooth. Blend in sour cream, sugar & salt on low speed. Stir in fruit & marshmallows. Pour into 6 to 8 individual molds or into a 4-1/2 C. mold. Freeze at least 8 hours. ten minutes before serving, unmold onto crisp greens.
