Gingerbread Cookies


1/2 C. butter, at room temperature.....3 C. flour

1/2 C. sugar......................................3/4 t. baking soda

1 egg................................................1/4 t. salt

1/2 C. dark molasses.......................2 t. ground ginger

1 T. cider vinegar............................1/2 t. cinnamon

In a mixing bowl, cream butter & sugar till light in color. Mix in egg, molasses & vinegar, beating till smooth. Stir together the dry ingredients & mix in, beating till just blended. Chill dough 1 hour to firm up. On a lightly floured board, roll out to 1/8" thick & cut out with decorative cutters. Place cookies on lightly greased cookie sheets. Bake on the middle rack of a preheated 375° oven for 6 to 8 minutes or until golden brown on the edges. Let cool on a rack.

Frosting:

2 T. butter.........................1 t. vanilla

2 C. powdered sugar........3 to 4 T. milk

In a small bowl, beat together butter, sugar, vanilla & enough milk to make a spreading consistency to the frosting. Frost decoratively.
