Hawaiian Cheesecake Bars


1-1/2 C. flour..............................2 eggs

3/4 C. sugar................................1-1/2 t. vanilla

3/4 C. butter, softened................1 large can crushed pineapple, drained

2 (8 oz.) packages cream cheese, softened

3 T. sugar...................................1-1/2 C. flake coconut

3 T. milk.....................................1-1/2 T. melted margarine

Combine flour, sugar & butter with pastry blender till fine. Pat evenly into the bottom of a 9 x 13" pan; bake at 350° for 10-15 minutes. Cool slightly.

Mix the cream cheese, sugar, milk & eggs with an electric mixer till creamy. Fold in the vanila & pineapple. Spread over the cooled crust. Combine the coconut with the melted margarine & sprinkle over filling. Bake at 350° for 15-20 minutes, until coconut is toasted & filling is set. Turn off oven, prop door open slightly & allow to set & cool. Cut into squares to serve- store in the refrigerator.
