Hawaiian Chicken


3 lb. boneless, skinless chicken breast, cut into cubes

2 T. flour..............................2 T. oil

1/4 C. brown sugar..............1/2 t. ground ginger

1-1/4 C. chicken broth.........1/4 C. soy sauce

4 C. fresh broccoil, cut up....1 can water chestnuts, sliced

1 can bamboo shoots...........1/4 C water

1/3 C. cornstarch.................1 (20 oz.) can chunk pineapple (drain & reserve juice)

1/4 C. vinegar......................2 cloves garlic, minced

2 green peppers, julienned....3 large carrots, julienned

Parboil carrots & broccoli. Brown chicken chunks in oil, add flour & brown lightly. Add brown sugar, ginger, broth, soy sauce, pineapple juice, vinegar & garlic. Heat to hot. Add cornstarch mixed with water; add other ingredients. Bring to a full boil, stirring occasionally. Cook till very thick. Serve on a bed of white rice.
