Irish Potato Cakes


2 c. mashed potatoes
1 egg, beaten
2 Tbsp. butter
1 tsp. caraway seed (optional)
1 c. all-purpose flour
3 Tbsp. baking powder
1/2 tsp. salt
fat for frying

Combine potatoes, egg, butter and caraway seed. Beat until fluffy. Sift the flour, baking powder and salt together; add to potato mixture. Knead lightly until well mixed. Roll on a lightly floured board to 1/4-inch thickness. Cut in squares or wedges and cook in a greased frying pan over low heat until golden brown. This requires about 5 minutes on each side. Serve at once with plenty of butter. Sprinkle generously with sugar as the Irish do.
