Irish Potato Candy

1 qt. boiler
1 qt. water
peanut butter
2 lb. powdered sugar
1 Irish potato
Combine in boiler, water and potato (cut in small pieces), thoroughly cook potatoes (well
done). Mash small amount of drained potatoes and slowly add powdered sugar, mixing well.
(Takes lots of sugar for small amount of tater.) Mix to consistency of pie crust dough.
Roll thin, spread peanut butter on that mess. Roll mixture (like jelly roll). Refrigerate;
cut into slices and look out- it's ready.
