Irish Potato Casserole
6 whole Irish potatoes
1/2 c. melted butter
2 c. grated Cheddar cheese
1/3 c. chopped green onions
3 Tbsp. salt
2 cartons sour cream
Irish potatoes should be about the size of an orange. Boil potatoes whole and refrigerate
overnight or cool completely. Peel potatoes and grate on a coarse grater. Mix to blend all
ingredients and put into greased casserole dish. Bake at 350 degrees for 30 to 40 minutes.
Serves 12.
