Irish Whiskey Soda Bread
1 c. raisins
1/2 c. Irish whiskey
3 c. all-purpose flour
1/2 c. sugar
1 Tbsp. baking powder
1 tsp. salt
1 Tbsp. grated orange rind
1/2 tsp. baking soda
1 1/3 c. buttermilk
1/2 c. melted butter
Soak raisins overnight in Irish whiskey. Combine flour, sugar, baking powder, salt and
orange rind in large bowl and mix well. Stir in raisin mixture, blending well. Dissolve
soda in buttermilk and add to flour mixture, stirring well. Stir in batter and mix well.
Spoon batter into a greased 2 quart casserole. Bake at 350 degrees for 50 minutes or until
golden brown. Serve with Whiskey Butter: Combine 1/2 cup soft butter and 1 tablespoon of
Irish Whiskey, blending well.
