Magic Beef Stew
Ingredients:
2 pounds beef stew meat, cubed
5 stalks celery
1 large onion
6 carrots
4 potatoes
1 cup V-8 Juice
Seasoning Mixture Ingredients:
3 teaspoons salt
1/2 teaspoon pepper
4 Tablespoons Minute Tapioca
2 Tablespoons sugar
Cut meat into 1-1/2" cubes. Cut celery into 2 inch pieces. Cut up
onion. Cut carrots into 2 inch pieces. Quarter the potatoes. Arrange the
meat in the bottom of a baking dish. Arrange vegetables on top of meat.
Sprinkle with seasoning mixture. Pour 1 cup of V-8 juice over all. Cover
pan tightly with aluminum foil. Bake in a 275 degree oven for 4 hours.
Serves 4.
