Lemon Spritz Cookies


1 C. butter, softened................................1 T. grated lemon peel

6 T. cream cheese, softened.....................2-1/2 C. flour

1 C. sugar...............................................1 t. baking powder

1 egg, slightly beaten...............................1 C. powdered sugar

3 T. lemon juice......................................1/2 C. nuts, coarsley chopped

In a large bowl, cream butter, cheese, & sugar till light & fluffy. Add egg, 1 T. lemon juice, & lemon peel. Mix well. Combine flour & baking powder, add to butter mixture & mix till smooth. Chill dough 1 hour. Put thru a cookie press, onto greased sheets, and bake at 375 degrees for 10 to 12 minutes, or just until edges brown. Make a glaze out of remaining 2 T. lemon juice & 1 C. powdered sugar, brush onto warm cookies & speinkle with nuts, if desired. Cool on wire racks. Yield: about 4 dozen.
