Macadamia Nut Pie


1 (6 oz.) shortbread pie crust
1 egg yolk, beaten
3 eggs
1/3 C. sugar
½ C. light corn syrup
¼ C. honey
3 T. butter or margarine, melted
1 C. macadamia nuts, chopped
whipped topping

Brush bottom & sides of crust with egg yolk; set on baking sheet. Bake at 375º for 5 minutes or until light brown. In a mixing bowl at medium speed, beat eggs, sugar, corn syrup, honey, butter & vanilla until well blended & frothy. Stir in nuts, reserving some for garnish. Pour into crust. Bake, on a baking sheet, for 40 minutes or until a knife inserted in the center comes out clean. Cool. Serve with dollops of whipped topping & reserved nuts. Yield: 8 servings.
