Chocolate Macaroon Pizza


1 pkg. (19-21 oz.) fudge brownie mix + ingredients to prepare

2 egg whites

1 (14 oz.) pkg. sweetened flaked coconut

1 (14 oz.) can sweetened condensed milk

1 (2.25 oz.) pkg. sliced almonds

1 (1 oz.) square semi-sweet baking chocolate

1 t. vegetable oil

Preheat oven to 375°. Cut a 15" circle of parchment paper, place on a 15" round baking stone. Prepare brownie mix according to package directions. Pour brownie batter onto parchment paper, spreading into a 14" circle. Do not bake without parchment paper or brownie will run off stone while baking. Bake 15-18 minutes, or until brownie is set- do not overbake. Remove from oven to a cooling rack (stone & brownie).

In another bowl, beat egg whites until stiff peaks form, fold coconut & condensed milk into beaten whites. Spread coconut mixture over top of brownie base to within 1/2" of edge; sprinkle with almonds. Return to oven & bake 25 minutes or until edges of coconut are deep golden brown. Remove to cooling rack.

Finely chop chocolate & melt with oil in the microwave, at 50% power, stirring often, until melted & smooth. Do not overheat.

Cut pizza into serving pieces with a pizza cutter. Drizzle with melted chocolate. Serves 16.
