Maple Leaf Sugar Cookies


2 sticks of butter (no substitutions)
1 cup sugar
1/2 cup maple syrup flavored with 3 drops maple extract
1 lg. egg yolk
1 t. salt
3 c. all purpose flour

Cream together butter and sugar until light and fluffy. Beat in the maple syrup and egg yolk. Sift together the salt and flour over the wet mixture and fold in thoroughly. Wrap dough in plastic and chill about 2 hours. Roll out on lightly floured board to 1/4" thickness and cut with a maple leaf cookie cutter. Bake at 350 degrees for approximately 12 min. Cool on racks.

Royal Icing with Maple Flavoring

2 lbs. powdered sugar
3 heaping T. powdered egg whites
water to thin
maple extract

Put one pound of the powdered sugar in your electric mixing bowl and add the powdered egg whites. Beat the two dry ingredients together. While the mixer is running slowly pour in the water until the mixture is fairly thin. Add the maple flavoring to taste, about 3 drops. Add more powdered sugar until the frosting is the desired consistency. Make sure your frosting is movable but not thin. Tint your frosting with fall colors. You can blend the colors or make each cookie a different color. Using an angled spatula carefully spread the frosting over the cookie and set on a rack. Use a skewer to make veins in the leaves. If your frosting is the right consistency the veins will stay open.
