Apple Cake
2 C. sugar
1 stick margarine
2 eggs
1 t. cinnamon
½ t. nutmeg
2 C. flour
2 t. soda
½ t. salt
4 C. chopped apples
½ C. chopped walnuts or pecans
Topping-
2 T. flour
½ C. brown sugar
½ C. melted margarine
2 T. water
2 C. chopped nuts
Cream the sugar & margarine, add the eggs & beat well. Mix together the dry ingredients & add to the creamed mixture; blend well. Add apple & nuts. This batter is quite stiff, but as you mix in the apples it will become less so.
Spread the batter into a greased 9x13” pan, bake at 350º for 45 minutes or until it tests done with a pick. Mix topping ingredients together, spread on the hot cake, and bake 5 minutes more. Yummy served warm with whipped topping or ice cream.
